Ingredients
4 Red Bell Peppers
1/2 Cup Red Onion Chopped
2 Tbs Chopped Minced Garlic
1 14.5 Oz Can Mexican Style Diced Tomatoes
1 11 0z Can Mexican Corn
1/2 Pound Lean Ground Beef (94%)
1 Tsp Chili Powder
1/2 Tsp Salt
1/4 Tsp ground pepper
1 Cup Cooked Brown Rice
Directions:
Preheat oven to 375 degrees
Cut the tops off of the Peppers and hollow out the inside.
In a large pot of boiling water cook peppers until tender, then drain.
Prepare the filling
In a large skillet, brown the ground beef, once browned, drain any excess oil and return to the ground beef to the skillet. Add the onion, garlic, diced tomatoes, corn, chili powder, salt, pepper & rice and stir it all together.
Put the peppers standing up in a baking dish and fill with the filling. Cover with aluminum foil and bake for about 30 mins. Remove foil and let tops get brown then serve.
The can easily be prepared as a vegetarian dish by omitting the ground beef and increasing the rice to 2 cups

This sounds awesome! However; to make it vegetarian instead of adding another cup of rice, I will add a cup of black beans. That will increase the protein.
