Healthy Chicken Parm

Ingredients

2 Tbsp Extra Virgin Olive Oil
2 Boneless, Skinless Chicken Breasts
2 Tbsp Italian Seasoned Bread Crumbs
2 Tsp Fresh Grated Parmesan Cheese
½ Cup Low Fat Marinara Sauce
1 Small Garlic Clove, Crushed
5 Handfuls Fresh Baby Spinach Leaves
Salt & Pepper to Taste

Directions:

Heat the oil in a skillet over medium heat. While the oil is heating, pound the chicken breasts to ¼ inch thickness and then sprinkle both sides with bread crumbs, cheese, salt and pepper. You will want to pat all of this into the breast slightly so that it sticks when you move the breasts to the pan. Place the seasoned chicken breasts into the pan with the garlic and sauté for 2 to 3 minutes per side until juices run clear. Remove the breasts to plates. Place ½ of the marinara in the pan along with the spinach and toss frequently for 2 to 3 minutes. Remove and place on top of chicken. While cooking the spinach, warm remaining marinara in microwave to serve on the side for those who like a saucier dish. Viola!
