Ingredients
1 lb extra lean ground beef (You could also use ground turkey, chicken or pork, but I used beef this time.)
2 medium green bell peppers
1 One ounce packet of reduced sodium taco seasoning
1 can no salt added diced tomatoes
1 can black beans, rinsed and drained
1/2 cup chopped green onion
1 tablespoon chopped fresh cilantro
Directions:
1. Remove stem, cut across the top of bell pepper and remove seeds. Boil peppers for about 15-20 minutes or until tender.
2. Cook beef until brown over med-high heat and drain, then stir in taco seasoning, beans, tomatoes, and green onions.
3. Fill the peppers with the beef mixture and enjoy!
Note: You will have quite a bit of beef mixture left over, so put it in a container, refrigerate and use in my taco salad recipe! Now, that’s a good way to stretch a grocery budget!
