Creamy edamame and pear salad bowl

Ingredients

1 pear, sliced
1/4 red onion, finely sliced
1 c raw celery, diced
4 c red and green lettuce, cut or torn
1 c cooked or canned (drained) edamame (soy beans)
And any other raw veges you like (e.g. grated beets, chopped bell pepper, cucumber)

Dressing:
1 c fat-free natural yogurt or cottage cheese
1 clove garlic crushed
1 tsp mustard
20g feta cheese
1/4 c lemon juice
Water to thin (if required)
salt/pepper to taste

Directions:

In a bowl place the salad ingredients.

To make the dressing, use a blender to whizz together the yogurt/cottage cheese, garlic, lemon juice, mustard, feta, salt/pepper (if using). Thin with water to required consistency.

Drizzle dressing on salad and toss. Enjoy as a meal or side dish to accompany meat.
