Ingredients
6 bell peppers (any color will work)
1 lb. lean ground turkey (or beef)
8 oz. bag of Whole Grain Brown Ready Rice (or 1/2 C brown rice, uncooked, to equal 2 C cooked rice)
16 oz. salsa (black bean and corn is great)
1 C shredded cheese, optional (cheddar, mexican style, pepperjack, etc.)
Directions:
Preheat the oven to 350 degrees F.
Brown ground meat in skillet and drain.
Meanwhile, halve peppers lengthwise and remove stem and seeds. Place halves in baking dish coated with nonstick spray (skin side down). Cook rice according to package instructions.
Combine rice, meat, and salsa. Stuff pepper halves.
Bake for 25-30 minutes. Top with cheese, if using, during last 5-7 minutes of baking.
