Crock Pot Chicken Chow Mein

Ingredients

2 Large Boneless, skinless chicken breasts cut up into bite sized pieces
2 cut up carrots
2 cut up celery stalks
1 chopped onion
2 chopped cloves of garlic
1-8 oz can sliced water chestnuts
1 cup fat free low sodium chicken broth
2 tbsp soy sauce
1/2 tsp ground ginger
2 tbsp cornstarch
2 tbsp water
1 tbsp peanut oil
1 cup sliced mushrooms
1-8 oz package snow peas
Chow mein noodles
2 cups hot cooked rice

Directions:

1. Cut chicken into small pieces. Heat oil in large skillet and cook chicken about 5 minutes.
2. Add carrots, celery, onion, garlic and water chestnuts to crock pot (preferably 3-1/2 to 6 quart size) and then add chicken.
3. Mix chicken broth, ground ginger and soy sauce in a small bowl and pour over chicken.
4. Cover and cook on low heat for about 7 hours.
5. RIght before cook time is complete, mix cornstarch and water in a small bowl, pour over chicken and stir. Add in mushrooms and snow peas. Increase heat to high setting, cover and cook 15 more minutes.
6. Serve with noodles and rice!
