Baked Tomatoes


4 medium tomatoes, cut in half
1/4 grated parmesan cheese
1 TB fresh, chopped oregano (or 1 tsp dried)
salt + pepper to taste
4 tsp extra virgin olive oil


– preheat oven to 450′ F
– spray baking pan with non-stick cooking spray
– drizzle olive oil over tomatoes
– top with cheese and oregano
– bake 10 to 15 minutes or until cheese is bubbly
– if desired sprinkle with salt and pepper
– serve immediately
