is there some real benefit to this that I am oblivious of? I just think it's kinda funny looking when I see people do this at the gym. You know where I'd be if I did that? Probably in the trainer's office, front and center ;)

I've seen that a few times. I guess they think they're using their leg muscles in a different way. I think people who do that don't do separate strength training. They try to make running/walking on the treadmill into a muscle toning activity, which, in my opinion, is a very poor substitute for squats, lunges, etc.

In short, they could use a good Cathe workout.

I do it squatting! I feel it in my hams and it gets my heartrate way up! (I, of course, slow way down to do this!)

It does work different muscles(the few times I've tried it), but I sure wouldn't do it in public. At least at home I won't have any witnesses to how ridiculous I look. I'm already self conscience enough just going forward on the TM at the gym.
