Martha's Pumpkin Curry Stew


I have a few pumpkins around and just love everything pumpkin, so made this yesterday and it came it so, so well and tasty. Plus, it doesn't take a lot of time!
I didn't have that specific carribean pepper(bonnet), so used a thai red chili instead. I also added some button mushrooms (during last 13-14 mins) to the mix just cause I love mushrooms in anything curry. (they are very rich in B vitamins as well!)
