Looking for the cleanest option for these foods

Hi All,

I always make my own nut milks, nut butters, coconut milk/water and stocks and broths. However, sometimes due to life/travel I don't have any on hand or it is still frozen and I need it now!

Does anyone know of the CLEANEST option for commercially provided:
Almond Milk
Other nut milks
Coconut Milk
Chicken/Veggie Stock/Broth

I prefer organic but will take non-organic. I am just looking for the least amount of additives/ fillers/ preservatives. I went to the grocery store last week and was looking at almond milks, but all of their ingredients were so processed. I ended up getting one brand (blue box - can't remember the name) to try it and my belly just bloated up immediately so I threw it out.

For coconut milk, I notice all brands had Guar Gum or Xantham Gum. I have to research what exactly that is and if it is not ideal for the body. (I am very sensitive to non-foods)

Perhaps to have a shelf life they must add those ingredients? I don't mind making all of the above myself and have done it for years, but sometimes I need an ingredient and I haven't prepared it.

Thanks!

My favorite almond milk is CALIFIA. It's in a bottle shaped like a bowling pin, it is delicious. I believe they have three different offerings. Sweetened, unsweetened vanilla and unsweetened. I love the unsweetened. (actually I love them all, but I buy the unsweetened) I have to get to the market early, because they can sell out in a morning.

Most 'drinking' coconut milks will have stabilizers -- at least the ones I've seen. Perhaps try culinary coconut milk (the canned stuff -- but I've seen it in tetrapacks in the Asian foods aisle at Whole Foods).
For bouillon, I like the Better than Bouillon organic vegetable base. It's a paste that you mix with water. It's delicious. They have it at WF and Costco. I looked at the ingredients and it does have maltodextrin and soy sauce in it, FYI. I don't have a problem with it, though.
Agreed w/ Karen that Califia is good.
Also, if you have a blender but no time, you can make an easy almond milk by blending a few tbsp almond butter with a cup or two of water (depending on desired thickness), a wee pinch of salt, and whatever else you usually toss in there. No straining, no hassle. I'm sure you could do the same with coconut butter/coconut manna -- the whole coconut stuff -- not just oil. The Artisana brand is totally ambrosial -- grab your spoon! :D

Thank you both. I didn't see Califia the other day, so I will ask the market specifically if they can get that brand.

Almond butter to make almond milk - never thought of that! My issue is the soaking of the almonds a good 8 hours prior. When I get back from travel, I want the milk *now*, not in 8 hours! This is a great idea.
