I eat "Food For Life" Sprouted Grain bread or hamburger buns. It's 100% sprouts (no flour). I soften it up a bit by putting it in the microwave for 12-15 seconds.
As for a soft, tasty bread that's good for you, I persoanally have nevver found one that meets all these criteria. Whole grain bread is never as soft as Wonder Bread type bread, unless some things are added to it to make it that way.
I like my bread to only have ingredients in that I recognize and would use myself.
Speaking of soft bread: when I was in grade school, my Girl Scout troup took a tour of Master Bread bakery in Minneapolis, and we each got a fresh loaf of bread. We spent the ride back taking the slices and mashing them into balls and throwing them at each other. I can't even eat that kind of bread now: it seems so pasty and doughy, and feels like a glob of dough in my stomach. Last time I tried, I almost got sick.
Homemade bread from a bread machine (or made the old-fashioned way, which gives you an arm workout!), can be somewhat soft and still have pretty good ingredients.
