baked spaghetti/lasagna recipe needed

Hello ladies!

I'm looking for a recipe that can be prepared ahead and either refrigerated or frozen for 12 adults - something italian like baked ziti/lasagna, etc.

We are going to Put-In-Bay, OH, next weekend for our "adults weekend" away -- it is always SUCH a blast...no kids, laying by the pool drinking frozen drinks, dancing until the wee hours...ahh, but I digress...anyway, we are in charge of dinner one night, and I'd like something that can be made ahead of time and then popped in the oven. Pair it with a nice salad and garlic bread and we're good to go!

Any proven, awesome, "knock your socks off" recipes you'd like to share?

I did do this though.

Eggplant casserole.

Chinese noodles-not wheat but rice.
Layer with spaghetti sauce (diced tomatoes and tomato sauce and other herbs and spices), cheese and eggplant.

Here is the baked spaghetti I make and even take to outings. It is super easy.

Baked Spaghetti

1 box ziti pasta or whatever kind of pasta you prefer, cooked and drained
1 pkg pepperoni
1 lb sausage, browned and drained
1 jar spaghetti sauce
1 pkg Italian blend cheese or more if you prefer

Mix all of these together, except the cheese, and place in a baking dish. Place the cheese on top. You can use as much as you like if you want it cheesier. Bake at 350 degrees until the cheese melts.

Since you want to freeze and bake later, you might want to hold off on the cheese until the dish is warmed up and then add the cheese the last 10-15 minutes to melt.
 
Kristi's recipe sounds great and super easy. This one is more work, but if you have any vegetarians in the crowd, it works well. It's manicotti, although you could easily put the filling into shells. This recipe serves about 6 adults, so you'd need to double it. My dad, who is a die-hard meat eater, can't believe this dish doesn't have meat in it. There's enough cheese to make meat eaters happy!

Manicotti

14 manicotti shells
1 1/2 cups cottage cheese
3 cups mozzarella cheese, divided
1 egg
1 medium onion, chopped
oregano, thyme, basil, salt, pepper (or whatever spices you like, Mrs. Dash is good in this) to taste
1 jar spaghetti sauce

Cook the manicotti shells according to the directions. Combine the cottage cheese, 1 cup of the mozzarella, and everything else except the sauce. Stuff the noodles with the filling. Put into a 13 X 9 baking dish. Pour the sauce over the noodles. Put the other 2 cups of mozzarella on top. At this point you can freeze it or bake it. For baking, 350 degrees for about 20 minutes (until all the cheese melts on top). If you freeze it, let it thaw overnight in the fridge, then bake it at 350 for about 30 minutes, probably.

What I haven't tried is baking it when it's made and then freezing it. That might work because it re-heats really well. In fact, I think it tastes better the next day.

Anyway, have fun on your trip, whatever you choose to take!

My step-mom made this and I just wing it, so am not sure of exact counts of anything, but it always turns out fabulous!


Lasagna

1 box lasagna noodles
2 cups ricotta cheese
mozzarella cheese-shredded, lots!
garlic powder
2 eggs
tomato paste mixed with 1 cup water-then add to spaghetti sauce
1 jar of good spaghetti sauce
salt and pepper


In a big bowl combine the ricotta cheese, 3 cups shredded mozz.cheese, the eggs and season with the salt and pepper and garlic powder. You can also add some chopped parsley or fresh chopped basil if you like.

Now take the dry noodles and place a layer in your pan...top with part of your cheese mixture, sprinkle some mozz. cheese, then pour a cup or so of the sauce, then layer more dry noodles, cheese mixture, sauce, etc...until you have used up everything. The top layer should end with noodles and sauce. Then top it all off with lots of mozz. cheese.

Now the important part: Take 1/2 to one cup water and pour all over your lasagna. This makes your dish amazing, much better than cooking the noodles first. They wind up al dente, instead of just soggy.

Cover with foil and bake in the oven at 350 for 45 minutes to one hour. The last 15 minutes of baking uncover so the top gets nice and bubbly brown.

:9 Sorry this isn't formally written, I just know it by heart, and it always gets rave reviews, the next day, its even better.:7

Oh, and we grew up vegetarians, so mom made this without meat, I suppose you could add ground beef or something, but it is so good as is you will not miss the meat at all!
 
I take the basic lasagna ingredients minus the lasagna and mix it with an al dente cooked rotelli or shells. This freezes well.
 
Frighteningly NOT clean :9 :

Spaghetti Pie

6 ounces spaghetti 2T butter or margarine
1/3 c grated parmesan cheese 2 well-beaten eggs
1 c cottage cheese 1lb ground beef
1/2 c chopped onion 1/4 c chopped green pepper
1 8-oz can tomatoes, cut up 1 6-oz can tomato paste
1 tsp sugar 1 tsp dried oregano, crushed
1/2 tsp garlic salt 1/2 c shredded mozzarella cheese

Cook the spaghetti according to pkg directions; drain (should have about 3 c cooked spaghetti). Stir butter or margarine into hot spaghetti. Stir in parmesan cheese and eggs. Form spaghetti mixture into a “crust” in a buttered 10-inch pie plate. Spread cottage cheese over bottom of spaghetti crust.
In skillet cook ground beef, onion, and green pepper till vegetables are tender and meat is browned. Drain off excess fat. Stir in undrained tomatoes, tomato paste, sugar, oregano, and garlic salt; heat through.
Turn meat mixture into spaghetti crust. Bake, uncovered, in 350 degree oven for 20 minutes. Sprinkle the mozzarella cheese atop; bake five minutes longer or till cheese melts.
