30 Day Veggers - Day 11

Goodmorning ladies. Hopefully, you are all looking forward to a 3 day weekend. :) I know I am. My lucky DH is off today too.

I made the Corn Chowder last night and it was a huge success. DH liked it even better that the Potato Soup. I'll go hunt up the recipe and post it here in a minute. It is another one that I got online. I have been writing all of my successful online recipes down on cards and keeping them in recipe file so I can refer to them later.

Here's the menu for today:

B - Whole Wheat English Muffin w/ Organic Strawberry Spread
S - Strawberry Yogurt with granola
L - Leftover Soup
S - 1 Kashi Dark Chocolate Chip Cookie (these are awesome and are packed with grains)
D - Not sure yet, I may do the stuffed shells that I have a recipe for or a veggie lasagna

Yes, Liann, you MUST share your corn chowder recipe!!! :D It sounds awesome!

Tonight is PIZZA NIGHT! What more need I say? :9 We always get take-n-bake from Nick N Willy's. Always Margherita (tomatoes, basil, olive oil and mozarella). And always a big green salad with balsamic vinaigrette. Yummmmm!

I'm not sure what I'm having for lunch today. I'm leaving work early today (taking the afternoon off), and I was thinking of stopping at Schlotzsky's for a veggie sandwich on wheat! :9

Today:

B - cereal with banana and soy milk
S - Luna bar, grapes
L - WW spaghetti with some kind of sauce my SO made with veggies and beans, apple

I'm not sure about the rest of the day.

What's everyone doing for the long weekend?
 
Here is the Corn Chowder Recipe. It does take a little bit of time chopping everything up and throwing it together, but it will last you for a week. We had sooo much left over and that is after us both having seconds! You will find yourself having to add a little more salt than a dash since nothing is salted at all until the end.

Classic Corn Chowder

3 cups corn kernels, divided (I used frozen corn)
8 cups water
1/4 cup margarine
2 Tbsp. minced shallots
2 tsp. minced garlic
1 yellow onion, diced
2 red peppers, diced
2 julienned leeks, white parts only
2 stalks celery, diced
1 cup vegan chicken bouillon
2 carrots, diced
4 potatoes, diced
1 cup kale, cut into 1-inch cubes
1 Tbsp. vegan cream cheese (or light regular)
4 Tbsp. yellow corn meal
1 tsp. chopped fresh sage (I just used dried sage and thyme)
1 tsp. chopped thyme
Salt and pepper, to taste

• Place 1 cup each of the corn and water in a pot, bring to a boil, then reduce heat and simmer for 15 minutes. Puree and press through a sieve, saving the corn “cream.”
• Melt the margarine in a large pot. Add the shallots, garlic, onion, peppers, leeks, and celery and cook until soft (It takes a while to get the celery soft, so I put that in first and add the rest later, saving the red peppers for last). Add 6 cups of the water, the bouillon, carrots, potato, and kale. Bring to a boil, then lower the heat and simmer for 20 minutes.
• Beat the vegan cream cheese, 1 cup of the water, the corn meal, and the corn “cream” until smooth. Add to the soup along with the remaining corn, herbs, salt and pepper and bring to a boil again. Let simmer 20 minutes and you are ready to go.

Makes 6-8 servings


I also threw together some veggie wraps with some cream cheese, sprouts, spinach, red cabbage, and avocado. My DH had some turkey and swiss on his and he really liked it.

Emily - My DH has found this pizza place not far from our house that he LOVES now, so I may give up on a fancy dinner and just have him pick us up a pizza. ;)

Shelley - My plans are to clean up the house tonight, so I can enjoy just hanging around the house and reading this weekend. On Monday, we are having a cookout at my parent's house. :)
 
Got my cookbooks - Moosewood Collection and Cafe Flora. They look great - I know Moosewood is quite popular, but the Cafe Flora looks amazing. Some of the recipes are "showstoppers" others much more simple. They all look really great, though!

Liann - the corn chowder looks yummy. I was going to make the potato soup this weekend but maybe I will do the chowder instead. I hope you enjoy the time off with DH

Emily - It is pizza night at my house tonight as well. I use a whole wheat crust then spread it with crushed tomatos (from my garden) then add mushrooms and fresh baby spinach with mozzarella cheese. Yummy!!

Shelley - No exciting plans for the weekend unless you count cleaning out the basement fun.
