1 Eggland’s Best egg
2 cups raw spinach (baby spinach is best)
1/4 avocado, mashed with a fork
4 medium sized strawberries, sliced
1 – 2 tablespoons raisins or dried cranberries
Parmesan, Feta, Gorgonzola, or other cheese to taste
Begin by hard boiling egg. While egg is cooking, place all other ingredients in covered salad bowl or other seal-able container.
Once egg is cooked, peel and slice the egg and add to other ingredients. Shake covered bowl until ingredients are thoroughly mixed. The avocado and egg mix together to create a creamy and delicious dressing.
You may also add cooked chicken, deli meat, cucumbers, and/or other favorite vegetables.
