Pumpkin Chia Pudding

Ingredients

• 1/2 cup pumpkin puree
• 4 pitted dates
• 1/3 cup organic coconut milk or Almond milk
• 1 banana
• 1/4 cup water
• 1/4 cup raw pecans
• Pinch of sea salt
• 1/2 teaspoon pumpkin pie spice (or 1/4 teaspoon cinnamon + 1/8 teaspoon nutmeg + 1/8 teaspoon cloves)
• 2 tablespoons chia seeds ( I use organic)

Directions:

1. In a high speed blender (such as a Vitamix), add the pumpkin puree, dates,choice of coconut or almond milk, banana, water, pecans, sea salt and pumpkin pie spice. Processes on high speed for one minute or until ingredients are well blended.
2.Shut off blender and gently Stir in the chia seeds
** Important~ do not process chia seeds in the blender**
3. Transfer mixture to (2) individual 4-ounce ramekins or fancy dessert glasses and refrigerate for at least 45 minutes before serving. Serve chilled.

You also May prepare in advance and store in the fridge for up to 3 days ( I usually triple ingredients and have alot on hand especially in the fall months!)
