Apple Ricotta “PUMP” Cakes with Spiced Apple Syrup

Apple Ricotta "PUMP" Cakes with Spiced Apple Syrup  by Jen Trudel

Ingredients

3/4 cup oats
I use Bob’s Red Mill GF Rolled Oats
2 Scoops Vanilla Protein powder
1/2 cup pumpkin puree
1/2 cup ricotta cheese
2 Eggs
1 tsp Pumpkin Pie Spice
1/2 tsp vanilla extract

For: Spiced Apple Syrup You will need…
1-2 TBSP Butter
I used Earth Balance coconut spread
1-2 TBSP Cinnamon
1 TBSP Agave
About a cup of freshly pureed Honeycrisp Apples
(or to save time you can use unsweetened apple sauce)

Directions:

Process/Blend until a smooth batter is formed.
Then…Lightly oil a heated skillet –
( I used coconut oil for added flavor.)

Pour small amounts of batter into skillet.
I used a ramekin to measure each serving out & made great small cakes!.

Cook over medium heat for 3-4 minutes each side.
Add your favorite toppings and garnish!
Or add this AWESOME Spiced apple Syrup!

Directions for Syrup:
Melt butter in small saucepan, add cinnamon and
agave, simmer for a few minutes. Add pureed apples (or apple sauce)
allow to cook over low heat while you prepare your
pancakes. Tweak ingredients to fit your taste.
