Lower carb protein oatmeal recipe

I make a big batch so its in my fridge all the time.

I take 2 cups old fashion oats and soak them in 10 cups of water for up to 48 hours. I just put them covered in the fridge to soak stirring them here and there.

In a glass bowl I microwave the oats /water mixture in 10 minute intervals. I stir them good and keep microwaving until they are thick and creamy. It takes around 60 min in my 700 watt microwave including stirring.

When I'm ready for a bowl I warm them up then add a scoop of vanilla protein isolate, Sometimes I add chunky applesauce and cinn. They are so good and creamy.

I use protein isolate instead of protein powder because the cholesterol is much lower.
 
Sounds interesting.....did you ever try doing the same in a crock pot? I make apple cinnamon oatmeal in a crock pot, using steel cut oats, then put in containers and freeze. Thaw in refrigerator, and microwave portions when I want it. So easy!

I would love to try that. I could soak them right in the crock pot. How do you do it? TIA Peggy

I'd love to know your method @fox2star too! I tried the slow cooker method once, but the oats were very over cooked and it was very difficult to clean my slow cooker. I had followed the instructions I had found online, but unsuccessfully. :( I've upgraded my slow cooker since then so am ready to try again.
 
See below. The bottom is a smaller quantity, which I use. I also cut down on the applesauce and only use one apple. Also sub pure maple syrup for the brown sugar.


Slow Cooker Cinnamon Apple Steel Cut Oats

Ingredients: 10 servings

  • cooking spray

  • 8 cups water

  • 23 ounces unsweetened applesauce

  • 1 1/2 cups steel cut oats
  • 2 Granny Smith apples - peeled, cored, and diced

  • 1/4 cup ground cinnamon, or to taste

  • 1/3 cup granular no-calorie sucralose sweetener (such as Splenda(R)) (optional)

    Directions
1. Lightly spray a 5-quart or larger slow cooker crock with cooking spray.

2. Combine water, applesauce, oats, diced apple, cinnamon, and sweetener in prepared slow cooker.

3. Cook on Low for 6 hours.

I scaled it down for my 1 quart slow cooker. I used 1 cup steel cut oats 2 cups water, 20 oz applesauce, 3 small apples, 1 tsp cinnamon and 1 tsp brown sugar. I also added a handful of dried cranberries. Cooked it on Low until desired doneness…test for chewiness. If too hard, add more water and let cook more.

I discovered Quaker Oat Bran Hot Cereal. I add a bit of protein isolate and fruit packed in juice. Carbs are lower.
 
I make an uncooked version of this without the egg. Just mix ricotta cheese, sweetener, and cream. Add a tablespoon each of unprocessed bran and flax meal and a few sliced raspberries or strawberries, if you can get away with eating berries. I've become addicted to and it's easy on my blood sugar (I'm diabetic). I have a personal question for you all.
