Default Texas menu

Your registration includes 5 yummy meals: Friday Dinner, Saturday Breakfast, Lunch & Dinner, and Sunday Breakfast. The tentative menus for each meal is shown below. Feel free to make suggestions.

Friday Arrival Dinner:
FIESTA MEXICANA

Table centerpieces of sombreros filled with Tri-Color Chips and Salsa Roja
Roasted Corn and Tomato Salad
Chalupa Bar; Red Chili Tostadas with Chili Con Queso, Refried Beans, Spicy Beef, Shredded Lettuce, Lime Marinated Cabbage, Diced Tomato, Sour Cream, Jalapenos and Cotija Cheese
Char grilled Beef and Chicken Fajita: Peppers, Onions, Pico De Gallo, Guacamole and Flour Tortillas
Pasta Prima Vera – Chef’s Choice
Spanish Rice
Borracho Beans
Coconut Caramel Flan, Vanilla Sheet Cake with Icing, and Mexican Chocolate Cake

Breakfast Saturday:

The group rate is $150 per night, but I'm not sure when the hotel reservation system will be set up to take reservations. We already have rooms blocked off, but our past experience with trips is that it always takes a little longer than planned for the hotel to set up the group rate and inform all of their employees. We will let you know when you can call to make a reservation.

The menu looks great! It looks like for the most part there will be gluten-free foods available and vegetarian options, so I want to thank you for that, and tell you I appreciate it!!!!!

I'm also very appreciative of all the vegetarian options -- I avoid meat, fish and dairy.
