I seem to recall reading somewhere some uses for Ricotta cheese as a protein source, like a smoothie or something. Does anyone know of any recipes? My first reaction is like, ricotta cheese???? you've got to be kidding me. I've seen it mentioned more than once though, so I thought I'd ask. I bought some skim 1% ricotta today, now I just need to know what to do with it.

Ricotta can be used in lots of things - like lasagna, as a sauce for pasta even as a dessert when sweetened. I suggest going to a few recipe sites like allrecipes.com or eatingwell for some ideas.

Hello
Did you check the Southbeach site. I know I have seen some pretty nice dessert recipes in my book. Ill look for them.I hope to hear some other uses also.

I've actually used it for sandwich spreads even. Don't have that recipe right off hand. I'm sure you spice it up with herbs and it also had tomatoes and olives.
