Perfect Protein salad

hi! how many do u want? i'll start with this:

Perfect Protein Salad

3/4 c dry soybeans,soaked
3/4 c dry wheat or rye berries,soaked
1/4 to 1/3 c cider vinegar(to taste)
1 tsp salt
black pepper
1/4 c minced dill or 2 tsp dried
1/4 to 1/3 c mayo
1 to 2 small cloves garlic,minced
1/2 c finely minced parsley
1 c cottage cheese or mashed tofu
3 scallions,minced
1 med carrot,minced
1 small cucumber,peeled,seeded,and minced
some bell pepper,minced

opt:additional veggies like onion,celery,alfa sprouts,sliced radish,fresh riped tomato slices for garnish

place the soked soybeans in a med sized saucepan.cover with water. place the soaked wheat or rye berries in another sauce pan and add at least 2 c water. bring each to a boil,partially cover,and simmer until tender 1 to 1/4 hrs.you can also cook them in one large pot.their cooking times will be the same. when the soybeans are crunchy but tender and the grains are chewy but tender rinse them in a colander and drain well. transfer to a med sized bowl. combine everything and mix well.
