Brown Rice and Lentil Casserole

Hi girlfriends!

I just found this recipe, it sure looks easy and YUMMY too! I had to share it:

Brown Rice and Lentil Casserole

3 cups organic chix broth
3/4 cup lentils
1/2 cup brown rice
3/4 cup chopped onion
1 tsp italian seasoning
1 tsp garlic powder

Preheat oven to 300 degrees
Mix all ingredients in 11 x 7 baking dish
Cover with foil and bake for 1 hour and 10 minutes.

Remove from oven and add either 3/4 cup shredded carrot OR can of diced tomatoes (drained) and 3/4 cup chopped chix.

Return to oven uncovered for 20 minutes. Enjoy!

I made it last night with the tomatoes. YUM. I have this recipe serve 4. Here are the stats for the whole thing from nutrition data...

Denise~ This looks great! I eat tons of Lentil Soup but must sayonce winters over I'm not into soup type foods much being in hot humid TX!

I'll plan on whipping this up next week! My not so healthy alter ego said...
+ a dollop of sour cream
+ shredded Parmesean Romano!

WOW! That looks great! Do lentils have that much protein in them? Why did I not ever realize that before? I actually have everything on hand to make this, and may very well do so tonight.

Hey - you know you can try to use the 0% FAGE as a fat free substitute for the sour cream?? I used the FAGE last night mixed with Hidden Valley Ranch Powder Mix...it was fabulous-o!!!

And I really don't think that the paremsean is that bad for you, you just need a tiny bit since it is so bold.

i made this yesterday from my Fix and Forget It Lightly cookbook. it came out like mush! i made half a recipe of the lentils and brown rice and mistakenly made the whole recipe for the broth! i will make it again though.

So, Denise. I just want to make sure I'm clear.

I make this with either carrots and chicken OR tomatoes and chicken?
And it serves 4, and that's what the nutrition info is based on???

I made this today and it's FANTASTIC!!! I made it with the canned diced tomatoes and chicken, plus 2 fresh minced garlic cloves.

HEAVEN!

And DS (11) even liked it. When he originally asked what it was, I compared it to sloppy joes because it looked like that consistency.
