30 Day Veggers - Day 8

Goodmorning ladies! I've been running a little behind this morning, so I just grabbed an oatmeal breakfast bar and some coffee and ran out the door. I brought a salad and some soup for lunch. I made some Mexican Spagetti on Sunday (meatless of course) and I think those leftovers may be my dinner.

I'm keeping my fingers crossed that I get my cookbooks today!!! :)
 
Good morning ladies,

I made green beans and potatoes for dinner last night, it was so good! Like a soup almost!!! Not sure what I will cook today!

Liann Mexican Spagetti?? What is that?? Sounds intersting!

I will go to the libray today,to see if the got vegan planat!

Liann, I hope you get your cookbooks too. :)

Last night for dinner, I made pasta primavera, which is easy and delicious! Just sautee (in EVOO) some red bell pepper, zucchini and green beans with garlic, onion and crushed red pepper (so it's SPICY!). Then toss with cooked whole wheat penne, sprinkle with some parmiggiano reggiano cheese, if desired, and voila! Quick, healthy and tasty! :D One of the great things about vegetarian cooking is that it's really easy to just throw something together. Sautee some random veggies, serve them with pasta or rice, and you've got a meal. :9

I had Quaker Oatmeal Squares cereal with soy milk and a banana this morning. For lunch, I have leftover pasta primavera. For snacks, I have plain yogurt and granola, and string cheese and baby carrots. I'm not sure about dinner yet. DH may not be home for dinner, so I may just have cereal or pb&j or something.

ETA - Hi Belinda! I hope you find Vegan Planet - it's one of my favorite cookbooks! Try out the chocolate chip cookie recipe - it's amazing! :9
 
Belinda - It was a mixture of whole wheat spaghetti with salsa, corn, and black beans as the sauce and topped with some shredded white cheddar. Not bad and took about 5 minutes to make. I had to come up with something fast for DH on Sunday evening. He gets grouchy when he is hungry! ;)
 
Hey guys!!!!

Quick question before I start chatting....I'm taking the boys camping for our annual Labor Day weekend camping trip, and I need some suggestions on what to take for food. I have my homemade veggie bean burgers in place of the hamburgers. I'm thinking of taking a piece of salmon or tilapia for another meal plus a sweet potato (or 2). But what else can I take for the actual MEAL? I've got the snacks covered no problem....yogurt for breakfast, dried edamame and soy nuts for snacks, the usual s'mores (lol), etc. But the meals have me concerned.

What I normally cook on the campfire for the boys are burgers one meal, hot dogs another, kielbasa for a third, and chicken for the fourth night. I guess I can take a bunch of veggies fresh from my garden and roast them over the fire, right? Any other suggestions?

Also, I know some have mentioned cookbooks, and I apologize for not taking notes earlier, but a dear generous friend from the RT has sent me a gift card to a book store for me and the boys, and she directed me to buy myself a vegetarian cookbook. SO....what would your first choice be??? I will try to get the time later today to check out earlier days' posts so I can find the rec's so far!

Gayle - I will try to think of some other suggestions, but if your boys like baked potatoes, you could always grill those up and then do a "potato" bar with bacos, cheese, sour cream, etc... To dress it up a little more, you could always bring some veggie chili.

Not sure if the boys like shrimp either, but another idea would be shrimp skewers with veggies etc...

Ok I have to admit the Tofu stir fry did not go over well last night. My DH ate it but asked me not to make it for him again. He said he would eat the veggies but not the tofu. I have to agree that I was not that crazy about it either. I used the extra firm but the texture was like soggy bread. Perhaps I did something wrong??

Today I had ww toast with strawberry jam (I made the jam myself!) Will be having black beans and rice for lunch and I am not sure about dinner. But the baked potatoes sound good.
 
Good almost afternoon veggie eaters!

Teri Ket - In Vegan with a Vengeance, the author sautes (kinda) the tofu so it has a firmer texture on the outside. Also, you really need to press the tofu first (I'm not sure if you did), it makes a huge difference. Sorry if I'm not explaining it well, but it makes the tofu not like soggy bread!

I'm doing great with the dairy-free eating, though I certainly miss cheese. I'm thinking of buying the Uncheese Cookbook, but one of the reviews said you need time between real cheese and uncheese, or you will be sorely disappointed.

On another note, the hotel we're having our wedding at just called to change our tasting tomorrow to Sept 6. We're getting married on Sept. 22 and have had this appointment scheduled for quite a while. I'm so mad! Apparently something came up with the Exec Chef so no tasting and during the summer no sous chef. What? What is something comes up the weekend of the wedding? I understand emergencies, but what about backup plans? I don't know what to do. My boyfriend is a chef and really wants to lay into these folks -- that it is unacceptable --, but I'm going to wait to talk to my mom and see what she thinks. I don't want to escalate this unnecessarily. Okay, rant over!

Vanessa - thanks for the tip on the tofu. I will try and press it a little more. I did press it but only for a couple of seconds. ( I was in a hurry as usual!)

Way to go on the dairy free!! I do not think I am even close to being ready to give up cheese.

Congratulations on your upcoming wedding. As far as the tasting goes I am sorry you have hit a snag but I would call the events coordinator at the hotel and calming explain my cocerns and tell them you would like to know what back up plan they would have in case an "emergency" came up on the day of your wedding. Hopefully this will make you feel a little more comfortable.
 
Vanessa - Sorry about the wedding trauma! Your coming into the final stretch with preparations, so I'm sure this is a stressful time! Hopefully, everything will go off with a hitch. :) I think it would be good though to talk with your coordinator at the hotel and make sure that there is a back-up plan. Just let her know that this last minute scheduling change has not boosted your confidence much and that you need a little re-assurance that nothing like this will happen the day of. And feel free to rant to us all you want!!!
 
Hi all. Just a quick check in today as I have been at this computer for a while and need to go get on with the day!

Doing well with the eating so far. I admit I miss being able to pick at the turkey breast sitting in the firdge right now, but I am holding strong!! My DH offered me some before and I shot him a look, and he totally forgot what I was doing now.

Vanessa, hope it all works out for you with the tasting! I'm sure it will. The day of your wedding this will all be a distant memory!

Gayle: I was going to suggest also bringing portabello mushrooms to grill. You can actually use them in the middle of the bun like a burger, top it off with some roasted red peppers and some fresh mozzarella cheese!! Very tasty sandwich!

Thanks for all the advice and encouragement regarding the wedding. I just need to calm down a little bit before I give our lovely coordinator a call... I know we'll all still have lots of fun and that this won't matter much in a month, but how unprofessional!

Luckily I'm all about being a vegetarian otherwise I'd want that chef's head on a stick!

ETA: I've just browsed through the cookbooks from the library last night.

The Voluptuous Vegan seems to have a lot of good soup recipes, but the entree section seems confusing. Instead of just listing entree recipes she has menus and your really not sure what, let's say, the pesto goes on in the menu. But the recipes look good.

The Artful Vegan is from The Millenium Restaurant in San Francisco. Looks delicious, but a bit extravagant for everyday cooking, for me at any rate. Would be great, I think, for special occasions.

Some sort of Vegan Fast and Fresh cookbook was the last one I got yesterday. It looks a little basic, but I looked at this one the least amount of time, so I'm probably selling it short.

No Vegan Planet yet :( I'll keep y'all updated!
